Looks like on the sign up form in order to get the '35 more fandoms' to show up, you have to click on one of the three showing. Then the others pop up and you can unclick the one you clicked.

Please report that to AO3 support, along with your operating system and browser and browser version.

You should be able to click on "X more fandoms to choose from" in order to open the additional fandoms.
